WWF RAW on XBox looks to be the best wrestling game ever.
Fighting games are fun for a short time.
I love strategy games -- but I'd rather do Real-Time Strategy on my PC, and no-one does turn-based for the console systems (Final Fantasy Tactics was a notable exception -- the Warhammer game sucked)
I occasionally enjoy cart racers, but am not big on racing games.
I used to enjoy the RPG's, but have grown disillusioned with their linear nature.
There have been a few surprises -- Suikoden was a big surprise to me, as was Star Ocean. But those were both PS1 -- If I can find 'em, I'll loan 'em to you, if you're interested. Kartia was fun for a bit, but quickly lost its thrill.
NFL Fever for the XBOX is awesome (of course I'm biased because I tested it)
Also, the basketball game (I only know it by the codename) is really cool, not to mention Halo and Rally. There was a cool ship party for Gotham Racing but I haven't played it.
Halo didn't interest me. I saw too many reviewers with similar tastes to mine that disliked it, "It's like the same level over and over only with more bad guys every time."
Is Gotham Racing a Batman Racing Game? If so, I'm all over it. There was a pretty good looking Batman game coming out for PS2 or XBox, too ... can't remember which.
I plan to get a PS2 first because I have a bunch of PS1 games.
apestyle paid $199 for a PS2 with a game (not sure which one- the one where you drive people around the city do errands for the mob boss) and a DVD remote. His was refurbished but it was still a rockin deal. That was a couple months ago tho, not sure if that deals still around.
I had heard rumors they were thinking of it. I think I will not buy a gamecube and just play the older games they have wonderfully provided on the PS2.

I might just get one. When EA released World Cup '02 for the PS1, not just the PS2, they won my heart forever.
Before the '98 World Cup, somebody ran a sim of all the games to see who won. (I don't remember who won the sim, but it wasn't France.) I wanna do such a thing of '02, and it wouldn't surprise me if that's built in to the software.
